This simple and healthy recipe is the perfect side dish for Italian food. Pair it with spaghetti and meatballs for a balanced, filling meal!
Ingredients:
2 medium zucchini
2 Tbsp olive oil
1/2 tsp salt
1/8 tsp pepper
1 /2 Tbsp Italian seasoning
Directions:
Preheat oven to 400 degrees F.
Slice the zucchini by cutting width-wise to make 2 or 3 cylinders. Then cut each cylinder in half and then each half into 3-4 sticks (see picture).
On a foil lined sheet, place the zucchini and pour the oil and seasonings on top. Mix well and then spread evenly across the pan. I like to place them skin-side down.
Bake for 12-15 minutes or until fork-tender.
Notes:
Cooking time: I like zucchini with a little bite to it, but feel free to bake for longer if you want it softer!
This recipe doesn't hold well overnight because it gets pretty mushy so eat up! :)
