Peanut Butter Chocolate Breakfast Cookies

These fiber-filled cookies are so simple and yummy! They make the perfect filling breakfast or snack on-the-go!



Ingredients:

  • 2 1/2 cups old-fashioned oats

  • 1 cup creamy peanut butter

  • 1 ripe banana, mashed (about 1 cup)

  • 1/4 cup protein powder, optional

  • 1/4 cup maple syrup

  • 1/2 tsp vanilla

  • 3/4 tsp salt

  • 1 cup chocolate chips (I prefer dark)

Directions:

  1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper.

  2. Combine all of the ingredients (except for the chocolate chips) in a large mixing bowl. If you have a thick peanut butter, I recommend heating it up in the microwave for about 30 seconds to make it easier to mix in with the other ingredients.

  3. Add in the chocolate chips and combine well.

  4. Using a cookie scoop or a 1/4 measuring cup, scoop out the cookies onto the prepared baking sheet and gently press to flatten them. You can place them pretty close together because they won't spread out while baking.

  5. Bake for 14-16 minutes or until slightly golden brown. Don't overbake or they will be really dry!

Notes:

  • This recipe makes 18-21 cookies.

I made these last week and they were yummy! I wasn't sure I would like the banana flavor in the cookies but I ended up not minding it. I kept the cookies in the freezer and liked having a frozen treat ready to eat from the freezer.

These are excellent! I also was really excited that they were dairy free for my dietary needs.


I ended up substituting brown sugar for the maple syrup as a taste preference, and baked them for 11 minutes and they turned out great!
