This Protein Chocolate Granola is easy and quick! It makes a balanced breakfast when paired with some yogurt and fruit or even makes a great fiber-packed snack on its own.
Servings: About 4 cups
Cook Time: 40 minutes
Total Time: 50 minutes
Ingredients:
3 cups old fashioned oats
1/3 cup sugar
1/4 cup cocoa powder
1/4 cup PBFit
1/2 cup chocolate protein powder
1 tsp baking powder
3/4 tsp salt
1/2 cup milk
3 egg whites (about 1/3 to 1/2 cup)
2 Tbsp honey
1/4 cup mini chocolate chips
Directions:
Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper or a baking mat.
In a large bowl, stir together all of the dry ingredients. Then add in the milk, egg whites and honey.
Stir well until there are no dry patches. If needed, add an additional Tbsp or two of milk.
Pour the granola onto the cookie sheet and spread it out evenly.
Bake granola for 15 minutes then use a spatula to flip and stir the granola. If needed, break up any huge chunks into smaller bite-size pieces. Sprinkle on the chocolate chips and then put the pan back in the oven for 15-20 minutes.
Stir the granola again and let it cool completely. Store in an airtight container for up to two weeks.
Notes:
Sweetness: I don't like having overly sweet granola since I usually eat it with sweetened yogurt and fruit. If you want it sweeter, you can increase either the sugar or honey.
You can substitute the PBFit for peanut butter! I would recommend heating up the peanut butter slightly before adding it to the bowl to make it easier to incorporate.
