These Snickers Rice Krispie Treats have a peanut butter marshmallow rice krispie base followed by a caramel peanut layer and topped with chocolate!
Ingredients:
Rice Krispie layer:
1/4 cup (56 g) butter
1/2 cup (125 g) peanut butter
5 cups (220 g) mini marshmallows
6 cups (164 g) Rice Krispie cereal
Caramel & peanut layer (see note):
1 (11 oz.) bag caramel bits
2 Tbsp heavy cream or milk
1 cup roasted, salted peanuts
Chocolate layer:
1 1/4 cup chocolate chips
Directions:
Rice Krispie layer:
Generously spray a 9x13 pan and set aside.
Melt butter, peanut butter, and marshmallows in saucepan over medium heat, stirring occasionally.
Stir in Rice Krispies and then spread evenly in 9x13 pan. Be careful to not smash the cereal down as you are spreading it out.
Caramel layer:
In a microwave-safe bowl, pour in the bag of caramel bits and drizzle with heavy cream.
Melt the caramel in 30-second increments until it is fully melted but do not overheat! If the caramel gets overcooked it will be difficult to spread and result in crystallized caramel that will get stuck in your teeth. For the last little bit of melting, I will just do 5-10 second increments until it is fully melted.
Stir in the peanuts and then pour on top of the rice krispie layer.
Chocolate layer:
Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Spread the melted chocolate chips on top of the cereal mixture in a thin even layer.
Chill in fridge for 2 hours until the chocolate is set. Cut into equal squares and serve.
